3 Zamburiñas (Cantabrian scallop) on serrano ham with a lemon-coriander dressing.

Aged beef sirloin, served medium with a classical peppercorn sauce.

Iberico pig cheek braised in red wine for 5 hours with confit shallots and carrots.
